A is for Apples

I baked my first French tart. The occasion? A tea party with two young women, wives of grad students. They also brought their 18-20 month old boys. Unfortunately, I didn't baby proof my place. Fortunately nothing was broken!

Here's the recipe!
INGREDIENTS
-1 pie crust (I bought mine)
For the apple puree
-2 golden delicious apples, peeled & chopped
-1 vanilla bean, split lenghthwiwe with a small sharp knife (I used 1 tsp vanilla. How come vanilla beans cost $11 each???)
-2 TBS sugar
-1/2 TBS unsalted butter
For the apple topping
-2 golden delicious apples, peeled and thinly sliced
-3/4 TBS unsalted butter, melted
-1 TBS sugar

DIRECTIONS for pie crust:
Prepare as directed on the box. :)

DIRECTIONS for the apple puree:
Peel and chop apples.

Put them in saucepan with 1/4 cup water, vanilla, sugar and butter. Cook gently, stirring often until soft 10-15 minutes.

Transfer the mixture to a food processor and puree.

Spread the puree evenly in the tart crust.


DIRECTIONS for the topping:
Peel apples, and slice them thinly.

Arrange the apple slices in a circle around the edge; they should be slightly overlapping. Repeat for an inner circle going in the opposite direction fromthe outer circle. Brush with melted butter and sprinkle with the sugar.

Bake in a preheated oven at 400 degrees until just browned and tender 25-35 minuters. Serve warm or at room temperature.


Realize you have too many apple leftovers and make apple sauce!

  2. I thought I should make apple sauce because "tis the season" and because I didn't have any other idea of what to do with the excess of apples. At that stage, they were halfway to apple sauce anyway. It was destiny. :)

  3. Do you have Taste and See , Debbie Peck's cookbook? She has an apple bread that I think I served when you were here. Very moist using apples. That tarte looked yummy! So much less guilt in eating tartes than in eating pies!
